Our story: baking with purpose

Sometimes the biggest changes in life begin when you least expect them.

For me, it began in a hospital bed.

In 2025, I spent a month in hospital. It was a difficult and life-changing period, and after a series of tests and medical appointments, I was diagnosed with coeliac disease.

Suddenly, food became something I had to think about in a completely different way.

I couldn't simply walk into a bakery and choose something from the cabinet. I couldn't assume something labelled gluten-free was safe. I began learning about cross-contamination, ingredients, preparation methods and just how difficult it could be for someone with coeliac disease to find food that was not only safe, but genuinely delicious.

As a chef and pastry chef, I couldn't accept that.

I started experimenting in my kitchen.

I wanted to prove that gluten-free food didn't have to mean giving up the foods people love. Bread could be soft. Pastry could be flaky. Cakes could be beautiful. Desserts could be indulgent.

And, most importantly, gluten-free food could be made with the same passion, skill and attention to detail as anything else.

What started as something I was doing for myself soon became something much bigger.

That was the beginning of The Empowered Oven.

But as the business developed, I realised that my purpose wasn't only about gluten-free baking.

I had always believed that everyone deserves an opportunity to work, learn and feel valued. Through my own experiences and the people I met along the way, I became increasingly aware of how difficult meaningful employment can be for people with neurological disabilities.

So I decided to build a business around more than baking.

The Empowered Oven became a social-impact business with a simple belief: great food can create great opportunities.

But there is another part of food that is just as important to me.

Food brings people together.

It's more than what is on the plate.

It's sitting around a table with family. It's sharing a meal with friends. It's having a coffee and a piece of cake while talking about your day. It's the conversation that happens while people eat, laugh and connect.

For someone living with coeliac disease, being able to safely sit down and enjoy that experience can mean so much more than simply having something gluten-free to eat.

And for someone who may feel isolated because of disability, food can become a bridge.

It creates a reason to come together.

It creates conversation.

It creates belonging.

That's what I want The Empowered Oven to represent — connection as much as food.

I want people to walk away from something we've made not only thinking, "That was delicious," but also remembering the people they shared it with and the experience they had.

I have seen first-hand what happens when someone is given an opportunity instead of being defined by what they supposedly can't do.

It changes confidence.

It changes independence.

And sometimes, it changes someone's entire future.

My journey hasn't been straightforward. I've built businesses, worked in kitchens, managed teams, worked as a chef and pastry chef, taught others and experienced the highs and lows that come with running a small business.

I eventually made the difficult decision to close my shop and focus on building The Empowered Oven in a different way.

Rather than seeing that chapter as an ending, I chose to see it as the beginning of something bigger.

Today, I'm developing gluten-free baking courses and workshops designed to teach people practical skills while opening doors to education, employment and entrepreneurship.

I'm also working towards bringing these opportunities into community colleges, training organisations and disability-focused programs, with the goal of making the skills accessible to more people across Australia.

The Empowered Oven is still growing, but the mission is clear.

It started with me lying in a hospital bed, wondering what my life was going to look like after being diagnosed with coeliac disease.

I could have simply changed my diet and carried on.

Instead, I found a purpose.

I found a way to turn a difficult chapter of my life into something positive.

Because The Empowered Oven isn't just about gluten-free baking.

It's about food, opportunity, inclusion and connection.

It's about proving that a diagnosis doesn't have to define your future, that disability shouldn't define someone's potential, and that sometimes the most meaningful businesses are the ones that are built not just to make money, but to make a difference.

What began in a hospital bed is now becoming a movement — one recipe, one opportunity, one shared meal and one empowered person at a time.

Hello, I’m Scerena. For 28 years, I’ve lived and breathed the world of food — as a culinary chef and pastry chef. But life shifted when I became seriously ill, spent a month in hospital, and was diagnosed with celiac disease. The shock was real; suddenly, the foods I once created with joy were no longer safe. This personal challenge ignited a new passion: to create delicious, safe, gluten-free options for everyone.
